A new gastronomic concept created from our dream; to rescue authentic beef, we use the term rescue because of what is sold as beef in restaurants and butchers only 1% is authentic beef, we are proud to be part of such an exclusive 1%.
After seven years of intense achievements in Amaren where we have won the National Grill Competition in our first performance, we have been recognized with the 14th place in the world in the prestigious international gastronomic list World´s 101 Best Steak Restaurants, we have also given our customers to taste the best specimens in the world, achieving milestones such as Goliath the largest ox in history, the largest cow in Spain or the heaviest oxen in the Basque Country, we have created a new gastronomic concept: the Hambueysería. A unique space where we invite you to discover what for us is an authentic gourmet burger restaurant.
AMAREN'S OXEN
We travel all over the peninsula personally selecting the best oxen that we find on our way and then transfer them to our facilities, where during their last year we try to ensure that they live in an optimal and relaxed way, monitoring their feeding carefully and that the oxen remain healthy at all times.
Within our oxen we make two distinctions based on their age:
Steers from 5 to 7 years old: We do not slaughter any steer less than 5 years old, at Amaren we consider 5 years old as the minimum age necessary for the meat to reach the properties required to enjoy a unique, scarce product of exceptional quality.
Steers over 8 years old: Once the 8-year barrier is passed, two factors combine to allow us to enjoy one of the best meats in the world: the size of the steer exceeds 1.000 kg, and the specimen produces meat with properties that make its meat unique, which is why we always try to ensure that our specimens are over 8 years old.
Another very important factor is the breed of ox, within the wide variety that exists we have a special predilection for the Morucha, Berrenda and Charolais breeds.
OUR MEATS
Hambueysería is a gastronomic concept based on the best grilled ox burgers you can imagine. It is a very different space to what we usually understand as a hamburger restaurant. It all starts with the oxen that we lovingly raise just a few kilometres away from the restaurant, in Bilbao itself. Our oxen are the protagonists, the key to the spectacular flavour of our hamburgers, where the maximum quality of the meat is the main sign of identity.
At Hambueysería you can choose between different cuts of meat from our oxen for your hamburger. We prepare different blends every day depending on the muscles of the ox and the selection of available specimens. Our menu is completed with starters and complements more characteristic of a gourmet restaurant than a typical hamburger restaurant, all of which can be washed down with more than 200 references of different denominations that rest in our cellar.
MUCH MORE THAN A BURGER RESTAURANT
The star of our menu is undoubtedly the ox burgers prepared on the grill. The queens of the house are well accompanied by a series of starters and gourmet portions designed to make the experience complete. In addition to our beef you can also find premium cuts from other countries, top products such as A5 rated wagyu beef from Japan.
You can start the gastronomic feast with our famous homemade creamy beef croquettes, grilled boletus with black truffle butter, the legendary Amaren grilled veal sweetbreads or potatoes with cheese, egg and truffle sauce. Our menu also includes some grilled cuts of meat, such as the 35-day matured boneless T-bone steak or the 60-day matured Amaren selection of beef cutlet. For dessert you can’t miss the caramelised French toast with toffee, custard and rice pudding ice cream or our delicious homemade baked cheesecake with red fruits and fresh cheese mousse.
